Manuel Gonçalves
A graduate of the Lisbon School of Hospitality and Tourism, he has built a solid career in some of Portugal’s most prestigious kitchens, including the Bairro Alto Hotel and the acclaimed Epur by Vincent Farges. His leadership skills and constant drive for improvement make him a key asset to the restaurant’s team.
His passion for gastronomy has earned him recognition in several competitions, winning first place at the prestigious Goût de France and securing a spot on the podium at the Young Gastronomy Talent competition. He has also gained invaluable experience working in the high-pressure environment of Hell’s Kitchen, refining his skills and precision.

André Santos
André Santos brings with him a broad range of experience in renowned hotels and restaurants, where he honed his culinary skills. Passionate about Portuguese cuisine, the Chef masterfully combines his roots with Asian influences, creating a unique and unforgettable fusion of flavours.
He began his journey in Pontinha at CFPSA - Centro de Formação Profissional para o Sector Alimentar, where he graduated in 2008. He has gained vast experience in renowned restaurants and hotels, including Taberna 1300, Talho, Hotel Inspira Santa Marta, and more recently Bairro Alto Hotel.
His passion lies in the constant challenges of cooking, where every day presents a new opportunity to create and adapt.
